The room
A small kitchen, run with pride.
Chef Marco Romano grew up in his grandmother's kitchen in Lucca and trained in Florence before coming to Merced in 2014. Trattoria Fiorenza opened three years later in a 28-seat storefront on 18th Street. The dining room is small on purpose — every plate that leaves the pass is one Marco has touched.
Produce comes from a rotating short list of growers within 60 miles. The pasta is rolled by hand in the back twice a day. The bottle list is tight: ten reds, eight whites, three by the glass, all from producers we know personally.
Reservations are how we keep the kitchen sane and the tables full. Walk-ins land on the bar bench when there's room.
